Spring!

I love it.  The weather is changing.  We are expected to have a few cold fronts, but I think the warmer weather is here to stay.  We've been spending a little time outside.  Going on walks with the pup and whatnot.  I got some fresh fruit from my cousin.  Pineapple, watermelon, and honeydew.  Super yumm!  I love fruit.  I pretty well hate veggies, so I need to eat something healthy.  It's hard to diet when you hate veggies.  I've been forcing myself to eat some.  The ones I can handle without puking. 

I was so excited to read the second book in the Hunger Games series (Catching Fire), but I have been so busy.  Plus I've been indulging in a few evening television shows.  Biggest Loser, The Voice, American Idol, Law and Order SVU, American Idol results show (still so upset that Casey Abrams went home), and The Office.  I am going to do some cleaning today, some pretty heave cleaning, so I hope I get to get into this book.  I had planned to be done with it by Sunday evening, but that's just not possible.  I can't read that fast.  LOL!  I hope you all are having a great weekend.  I know mine is going to be great!

Zuppa Toscana Olive Garden copycat recipe


How to make it


  1. Brown sausage and crumble. Drain and set aside.
  2. Place onions, potatoes, chicken broth, water, garlic in pot and cook on medium heat until potatoes are done.
  3. Add sausage and bacon
  4. Salt and pepper to taste
  5. Simmer for another 10 minutes
  6. Turn to low heat
  7. Add Kale and cream
  8. Heat through and serve
    Serve with a crusty garlic bread and you have the Olive Garden right in your own home!  I kinda switched up the recipe a little bit.  I used 3 potatoes instead of 2 (wish I had done 4), 4 garlic cloves instead of 2, and I used all chicken broth, no water.
